I Shouldn’t, But I Did

7.5 hours of sleep! It’s been a while since I’ve gotten more than 6 – I’ll take it!

Lounged around in bed for a while, then had a breakfast snack before my morning walk.

It’s freezing in my house, yet very warm outside! I was definitely overdressed. Came home feeling sweaty, tired, nauseous (meds) and ready to eat.

Chopped collards, broccoli, snow peas, and carrots tossed in Tahini thinned with water…

…leftover pumpkin/parsnip, TJ’s dried orange cranberries, and Gerb’s Pumpkin Seeds

Next on the agenda – Healthy Rice Krispies Treats!

We’re having an early dinner with family tonight – I volunteered to make a gluten and sugar free dessert for all our dietary-restricted eaters. Been wanting to try this vegan Ricemellow Creme that Suzanne’s Specialties sent a while back:

I adapted the recipe found on this site. Start by melting 3 Tablespoons Coconut Manna and add 1 Tablespoon Cornstarch (dissolved in water). It began burning so I turned the heat down.

Then mix in the entire tub of Ricemellow Creme + 1 TB Vanilla Extract

The Ricemellow tastes JUST LIKE MARSHMALLOWS. Do a happy dance, vegans and diabetics!

I probably shouldn’t have used the entire bag of Puffed Rice Cereal.

But I did, and now it’s not sticky or sweet enough.

And I probably shouldn’t have heated up and added the remnants of this Chocolate Brown Rice Nectar.

But I did, and now I’m bringing over something that looks like a kindergarten art project.

It’s covered, chilling in the fridge, and I’m praying for hardening to happen. Do you see now why I never make desserts?! I’m way too impatient and I can’t follow directions.

Sorry, Aunt Heidi! If you’re reading this before I arrive, I’m supplementing with vegan chocolates!

Any advice to save my rice krispies tonight so they’ll be cut-able? I read somewhere that you should bake them – but I’m too scared to further ruin things!

  1. I’m so glad you know what a fluffernutter is! It seems like no one outside of New England does most of the time.

    • I lovvveee fluff sandwiches!!!! I didn’t know they had vegan fluff! (I only recently discovered they had vegan marshmallows) Hmmm I do think that by refrigerating the treats they should be firm enough to cut… I’d be scared to bake them cuz they might burn with all the sugars in it…

  4. Oh dear, I think this might be a dessert disaster. Don’t worry, it happens to me all the time. May I suggest picking up something gluten and sugar free from Whole Foods bakery on your way to the party? :)

  6. I bet if you sprinkled some non-sugar sugar on top (like stevia?) and baked it, it would ‘melt’ and perhaps you could press it down and make it more dense. Then re-refrigerate. I wonder how it will turn out. You can’t hurt it by baking it, honestly. Good luck!

  7. Those look great. I need to make regular rice krispie treats sometime in the near future. I have actually never made them. I think it’s because I never ate them that much as a kid, or as an adult. I did have my share of pb and fluff sandwiches, though! I miss them.

  8. Oh man, accidents are the worst! & it seems like everyone around here is “sue happy” after they get in one, especially now! My fiance has been sued twice in 3 years over accidents that weren’t even that bad. She’s in the middle of being sued right now over one that I was in with her along with her son. The people made up complete lies about what happened. I had to do a deposition this past Monday about it & the lawyer was such a jerk that I wanted to either kick the crap out of him or tell him what I really thought of him, but I bit my tongue (which as an Irish girl from Boston is tough to do! lol) Those rice krispies look good, its not about the look, its about the taste! Hope you have fun tonight:-)

    Hmm…I’m crappy with desserts. If it refuses to harden, though, sounds like you have Rice Crispy Treat Granola! I’d buy some vegan ice cream (if your guests can have agave, great, but I know there are SF vegan ice creams too) and make it sort of a crumble. But hopefully it hardens!

  14. baking is harder for me than sciences and algebra! I mean traditional baking with full fat and eggs is easy since it works out fine everytime but once it comes to baking things where the eggs get replaced by flax eggs I am hopeless. So I try to just stick to the traditional ways of baking even if that might not be the healthiest way to do

  16. oh man, i need to find that flutternutter stuff! i love rice crispy treats!

    and for easy cutting, i learned when i worked at the chocolate store that you should spray a very sharp knife with cooking spray every 2x you cut. and wear saran wrap on the other hand so you can push on the crispies while you cut and don’t get all messy!

    and if you have to do a do over, you can always mix pb w/ white chocolate and mix it with the rice crispies, gently fold in some marshmallows (or vegan ones, whatver) and sprinkle w/ chocolate chips. way easier than regular ones and faster to make!
