Peanut Butter and Jelly Cereal Bars

As I mentioned in yesterday’s post, I did a little baking experiment. For a box mix queen like myself, this was big.

3 ingredients

This Blueberry Rice Nectar Syrup has been sitting in my pantry since May, when Suzanne’s Specialties first sent me their naturally-sweetened products

It pours very easily right outa the jar. I used 3/4 cup into 1/2 a jar of creamy peanut butter

I had already burned part of the PB so keep that flame low, and stir constantly!!!

Add the entire box (about 4 cups worth) of an unsweetened multigrain cereal, like Uncle Sam

Press into a greased 8×8 container and bake for 10 minutes at 350.

Reason 9,481 I am not a baker (although I wouldn’t really call this “baking”):

Allow the pan to cool COMPLETELY (stick it in the fridge for a few hours) before flipping over and cutting.

Or else you’ll wind up with crumbled, misshapen bars…

…which wasn’t too terrible, because that meant I could test the product pieces (delectable!!!) before packing them up to share for the play reading I did last night.

Consumed the giant apple in the car, and ate about 2 bars at the reading

There was also a platter of cut up Asian pears, which I devoured 1/3 of.

Know of any other 3-ingredient “baking” recipes?! Preferably one that will use up the other half of my brown rice syrup jar?

    Peanut butter, butter ( I think) and an egg.
    Theyre scrumptious and you can have add ins like chocolate(<– amazing) and dried fruit.

  10. mix crushed Oreos with 8 oz cream cheese. roll into balls, set in fridge for an hour, dip into melted white chocolate, and refrigerate again until hard. 3 ingredients, no baking, so easy, and delicious!

  12. use brown rice syrup to make nori crisps– they eat it as a drinking snack in Korea and Japan apparently. mix equal amounts of brown rice syrup and sesame oil and add a bit of cayenne pepper. then break nori sheets into strips and brush the top of the strips with the mixure and sprinkle with sesame seeds and salt. Bake in a oven preheated to 350 for 10 minutes, flip the strips over, brush the other sides, and bake for 10 more minutes. never actually done it myself, but have a friend who has made (and i have eaten) before.

  14. Hi Lynn! those bars look delish! When you said brown rice syrup, I immediately thought of the kale salad at M Cafe de chaya! Their online recipe shows that the dressing uses brown rice syrup and peanut butter. hope you have a wonderful rest of the week!

    But I’ve never tried PB+J.
    Are they really good together?
    And which jelly works best?
    I’m kinda afraid to dive in (i.e. try a PB+J sammie) and find out it’s not as good as I thought it would be… ;)

  16. I’m not the biggest jelly fan, but I love that you used Uncle Sam’s for it. That stuff is pretty good for such purposes…

  17. You can use the rest of the brown rice syrup for Rice Crispy treats from “The Kind Diet” cookbook. But it’s similar to what you made though so I’m not sure you would want to make bars again.

  18. you should try granola oat chewy bars with that syrup. also, as a helpful tip – if you line your pan with parchment paper it will help with the sticky crumbly factor when you are removing them.

  21. I just made a three-ingredient dessert but it wasn’t healthy. I laid out a sheet of crescent roll dough on a baking sheet, spread cream cheese and pie filling (cherry would be best but I used apple) down the middle and fold the sides up and over. I then used 6 triangles from another can of crescent rolls to put over the top, alternating which side the points were facing, and tucking the ends under to kind of resemble a braid. I baked at 375 for 30 minutes and made a glaze with cream cheese, powdered sugar, and cream. So good! But yours sounds so much healthier.

  22. I made one for Christmas dessert!
    (Dates + walnuts (or pecans) + unsweetened cocoa powder) blend, roll into balls, into the fridge. No baking. So delicious. A splash of vanilla helps too.

    Your cereal bar looks awesome! I’ll probably have serious problems with not eating all of it in one sitting if I end up making it. Danger!
